Chicken Update

I didn't plan on posting anything tonight, but when I got home and checked on the chickens, guess what I found lying in the nesting box?

The first egg!!!!



A small but perfectly shaped pinkish brown egg lying right next to the wooden egg I had placed in the nesting box several weeks ago.  Now wasn't she just the smartest chicken to know exactly where to lay it?!


I was so excited.  I congratulated the brilliant girl on her accomplishment and took my new prize to the kitchen where I fried it with just a sprinkling of salt and pepper. 

 
The yolk was almost orange, and it was delicious.  We are now in business.  Can't wait for the next one!

  2. Virginia - Congratulations on your 1st egg! (I've been trying to work up my nerve to do chickens!) I was searching for a Fig Preserves recipe & found yours - oooooh! Have you ever tried to adapt it to use dried figs?

    I grew up back East in an Italian neighborhood where EVERYONE had a tree. Unfortunately, I now live in a fig-free zone about 100 miles from the nearest "big" city (which isn't very..)

    I'm not familiar with "posting" so please forgive any lapse in etiquette.

  3. I have never tried it with dried figs because I always have access to fresh. If all you have is access to dried, you may be able to rehydrate them before covering with sugar and lemon. I have no idea how it would turn out, but that would be something to think about. Let me know how it goes if you try it. You'll just have to remember that you may need to compensate for the lack of moisture in the figs by adding a little liquid with your sugar and lemon (not too much though).
