What Does Headspace Mean?

Well, literally, headspace is the space left at the top of the jar once it has been filled with food.  But, on this blog, it also refers to a state of mind.  When I was trying to come up with a title, Headspace seemed to fit as both a common canning term and a result of cooking and canning.  The result is that when I am in the kitchen, my head clears (even if only for a few minutes), and I am relaxed and only aware of the task at hand (which is a great feeling for someone whose head is constantly spinning with thoughts of a million other things that need to be done). 

Who Am I?

I am a southern girl who grew up in a family of great cooks.  Family gatherings and conversations often revolved around food (and still do), and I was blessed to inherit a love of cooking from them.  As my interest in cooking developed, I determined that simple is better, and that is the motto I follow in the kitchen.  The meals I prepare and the foods I preserve are based on simple ingredients and methods.  I believe food should be healthy, fresh, and as local as possible.  That means supporting local farmers at markets in and around the city on a weekly basis as well as growing some food at home.  The more local it is, the healthier it is, and the better it will taste.  It's as simple as that.
